Recipe: Southwest Chicken Chowder Ingredients:
- 1 lb. diced chicken breast
- ¼ lb. chopped bacon
- ¼ cup R.L. Schreiber Southwest Blend
- 1 bag R.L. Schreiber Cream Soup Base
- 1 gal. water
- 2 cups corn kernels
- 2 cups diced potatoes
- 2 cups diced bell peppers
Instructions:
- Cook chopped bacon and diced chicken in a large pot over medium heat until just done.
- Add potatoes, corn, and bell peppers, and cook until browned.
- Add Southwest Blend and stir to coat
- In a separate bowl, whisk Cream Soup Base with water until smooth, then add to the pot.
- Simmer for 20 minutes.
- Serve hot with a sprinkle of fresh cilantro.
